10 EASY STEPS FOR THE STORAGE OF HIGH QUALITY CHOCOLATE

  1. Store chocolate in a cool, dry and ventilated room. Temperature should be kept stable and should not exceed 18°C (64° F) and relative air humidity not more than 65%.
  2. Use air conditioning where necessary and avoid fluctuations in temperature as these may cause condensed water on the product.
  3. Make quality (spot) checks on receipt of goods. Handle chocolate with care to avoid physical damage to what is, after all, delicate food.
  4. Rotate stocks on a first in / first out basis and observe date markings (“used by” or “best before”). Do not overstock.
  5. Stack chocolate away from walls or pillars and not directly on the floor (use pallets).
  6. Place chocolate away from strong smelling goods such as soap, detergents or disinfectants and avoid warm-up caused by sunlight and lamps.
  7. Without racking, do not stack cases higher than 180cm (6 feet) to avoid damage due to crushing.
  8. Keep store room, shelves and the immediate surrounding neat and tidy and free of rodents and insects: clean and regular intervals. Dispose of refuse daily.
  9. Remove and destroy, as soon as possible, products that are crushed, have torn wrappers or are heat damaged. Do not keep such defective items next to your regular merchandise.
  10. Protect store room and stocks from infestation by following the above easy steps and by regularly controlling their continuous implementation.
